this takes us through a ~24 hour period in a sous chef's life, from open to open more or less
we get facts mixed w/ humor & plenty of reality [restaurant industry be like that] -- this is totally relatable & technical
once finishing the story, the book concludes w/ a list & explanation of kitchen terms
hotel pans, salamander, the pass...
